目前,在食品等行业广泛使用二氧化碳作为防腐剂、致冷剂、萃取剂、保护性气体或碳酸化剂。因为从防腐的角度讲,二氧化碳能对微生物起作用是由于①二氧化碳分压的增高,影响需氧微生物对氧的利用。②二氧化碳能终止各种微生物的呼吸代谢。③如果食品中存在大量二氧化碳,可改变食品表面的PH值,而使微生物失去生存的必需条件。二氧化碳对于多脂食品、乳制品、快餐食品、花生和其他对氧敏感的干制品的“抗氧化剂”作用和在贮藏环境中对水果、蔬菜及谷物呼吸作用影响均较其抗菌作用重要得多。在果汁、软饮料、葡萄酒中的二氧化碳主要起防腐作用,此外它在软饮料中还起清凉作用,阻碍微生物生长,致死嗜氧微生物,突出香气赋以饮料,舒适的杀口感。现在广泛用食品添加剂使用的二氧化碳产品对具有一定毒性、又可产生强烈异味的硫化物指标控制为苛刻。饮料技术学会、标准等对除二氧化硫外的总硫指标的控制限为O. IPPm,二氧化硫控制在I. OPPm。
